The Executive Chef
position will manage, coordinate, plan, and implement the day-to-day food service operation at Burlington High School and supervise the staff assigned to Burlington High School. This position will also perform and oversee food production duties as well as assist the Director in evaluating all BSFP kitchen staff.
As the
Executive Chef
, your primary responsibilities include, but are not limited to, the following:
Management Duties
Supervise, schedule, direct and manage part-time/full-time school year food service employees for the production of all meals. Train new employees; plan and issue daily work assignments; monitor work in progress and check completed work; assist with problems; evaluate job performance of food service employees annually; plan staffing needs and work schedules, fill absences. Train district cooks at their sites and on in-service days conduct periodic trainings. Create a schedule allowing periodic visits to other schools to do an on-site evaluation of procedures and practices.
Play a key role in the interview and hiring of new employees.
Manage and resolve employee complaints and issues bringing unusual or difficult issues to the attention of the Director.
In conjunction with
Food Education & Youth Outreach Manager
ensure local food is being utilized.
Oversee and assist all production staff in the performance of a wide range of cooking tasks associated with the meal preparation and distribution.
Plan, supervise, and coordinate all daily cafeteria operations, including food preparation, cooking, service, and clean-up.
Under the direction of the Assistant Director of Food Service, assist in planning, organizing and writing monthly menus for all programs. Menus must meet all State and Federal guidelines as well as any District Wellness Policies. Cost analysis must be completed for each food item on the menu as well as snack bar offerings. All production records must be done in accordance with State and Federal Child Nutrition requirements. Standardized recipes must be maintained and developed.
Test new recipes. Focus should be on menu expansion and creative introductions of menu items to increase quality, acceptance, participation, and cultural diversity of our menus.
Do on-site training at all BSD sites, for a 5-week cycle to allow all sites to take advantage of best practices and work to build on program efficiencies.
Maintain menus and production schedule at all “off-site” locations, such as Centerpoint, EEE, Horizons, King Street, and Boys and Girls Club.
Oversee DtBHS kitchen staff and production for the YES program.
Maintain and oversee summer staff at 10 summer sites.
Establish coverage for the daily staff absences as required to maintain our operation.
Coordinate the ordering of food and supplies daily/weekly to ensure the smooth operation of the BHS kitchen. Receive and check for quality control of all inventory involved in the production kitchen to include USDA Commodities.
Plan food quantities based on meal services: breakfast, lunch, supper, catering, and special events. Modify standard menus as appropriate to participation.
Control inventory, rotate product, and maintain levels in order to minimize food waste and spoilage.
Maintain open channels of communication with the principals, teachers, parents, and students to guarantee a smooth and successful program.
General Food Service Duties
Direct the preparation, cooking, and assist in the execution of breakfast, lunch, supper, catering and special events with minimal support. Introduce new breakfast and lunch items.
Ensure that established health and safety standards are maintained.
Oversee food service operations on service lines, and assist with various food preparations, cooking, baking, and clean-up tasks as needed.
Ability to comply with State Sanitation Guideline requirements stating that all employees shall keep clean and wear clean outer garments at all times while engaged in handling food, drink, utensils or equipment. The use of caps, hairnets, headbands, pins, or other hair restraints is required for all food handlers.
Regularly monitor all foods for quality of taste, texture, and appearance. Order food and supplies daily/weekly.
Oversee that all food and supply storage areas are clean and organized.
Oversee the unloading of trucks, checking in of orders, and placement and rotation of stock.
Performs additional duties as assigned.
Qualifications, Skills, and Experience:
Associate's degree or higher in Culinary Arts or related field required and three years of directly related experience, including at least one year in a supervisory capacity; or equivalent training and experience in which comparable skills are acquired.
Certification in School Nutrition Specialist (SNS) and Serv-Safe preferred.
Excellent verbal and written communication skills.
Excellent interpersonal, customer service skills, negotiation, and conflict resolution skills.
Ability to act with integrity, professionalism, and confidentiality.
This position is not eligible for overtime.
